Maqluba


Maqluba or makloubeh  is a traditional Arabic dish popular in Palestine. It consists of lamb or chicken, rice, and a variety of fried vegetables such as tomatoes, potatoes, cauliflower, eggplant, and carrots. Maqluba is served by inverting the pot of cooked ingredients onto a tray, hence the name which means "upside down."

Maqluba is usually accompanied by either plain yogurt or a simple Arabic salad (salata falahi). It was also known as "the eggplant" because eggplant is often the main ingredient. Maqluba was even served to the leader Salah al-Din al-Ayyubi on the day he conquered Jerusalem in 1187.
